The Story Behind Poetica

Founded in 2022 by Drago and Jelena in Vrgorac, Dalmatia, Poetica is a Croatian distillery built around a shared vision of spirits, creativity and hospitality.

The surrounding landscape plays an important role in the distillery's identity. From the Biokovo Mountains to the Adriatic hinterland, the region provides inspiration for spirits that express a strong connection to their origins.

But Poetica extends beyond the bottle. Drago and Jelena have created a destination where distilling meets food, cocktails and culture. The experience includes a production space, a cellar for ageing spirits, an immersive room and a hidden speakeasy. Ingredients

• 50 ml Poetica Ginuine London Dry Gin
• 150 ml premium tonic water
• Plenty of ice
• A thin slice of citrus to garnish

Method

Fill a large glass with plenty of ice. Add the gin, top with premium tonic water and stir gently to combine. Garnish with a thin slice of citrus and serve.

Bartender's tip: Adjust the tonic ratio to taste. A little less tonic allows the gin's cardamom and spice character to come through more prominently.

2. Ginuine & Rubinino Highball

A lively combination of Croatian spirits and refreshing pink soda.

Ingredients

• 30 ml Poetica Ginuine London Dry Gin
• 30 ml Poetica Rubinino
• 10 ml fresh lime juice
• 100–150 ml pink soda
• Ice
• Citrus to garnish

Method

Fill a highball glass with ice. Add Ginuine, Rubinino and fresh lime juice. Top with pink soda, stir gently and garnish with citrus.

Bartender's tip: Start with 100 ml of pink soda for a more concentrated drink, or add more for a lighter, longer serve.
