The Old Fashioned was invented by James E. Pepper in 1880. Today, it remains one of the most iconic cocktails globally, celebrated for its timeless balance and coffee-infused depth.
Ingredients & Method
- 1.5 oz Bourbon
- 1 oz Kōloa Kaua'i Coffee Rum
- .25 oz Maple Syrup
- Dashes of Coffee Bitters & Orange Bitters
Mix ingredients in a stirring glass with ice, then strain into a highball glass with large ice cubes. Garnish with an orange slice and toasted waffle.
2. Tutti Frutti Cocktail
Meaning 'All Fruits' in Italian, this vibrant serve combines tropical juices with rich dark rum for a sophisticated, confectionary-inspired finish.
Ingredients & Method
- 1.5 oz Kōloa Kaua’i Dark Rum (Float)
- 1 oz Pineapple Juice & .5 oz Orange Juice
- .5 oz Passion Fruit Liqueur
- .5 oz Banana Liqueur
Blend juices and liqueurs with ice. Pour into a coconut-rimmed glass and gently float the Dark Rum on top.
3. Pineapple Express
A layered masterpiece adapted from Freddie Sarkis. This cocktail uses density to create a beautiful visual gradient of coffee and spice.
Ingredients & Method
- 2 oz Pineapple Juice (Bottom Layer)
- 1 oz Kōloa Kaua'i Coffee Rum (Middle Layer)
- 1 oz Kōloa Kaua‘i Spice Rum (Top Layer)
Gently float each layer over a bar spoon into a chilled glass. Garnish with fresh pineapple.
4. Boozy Apple Pie Milkshake
The term 'Milkshake' originally described health tonics made with whiskey. We have reimagined this as a decadent dessert serve using Dark Rum and autumn spices.
Ingredients & Method
- 2 oz Kōloa Kaua'i Dark Rum
- 2 Scoops Vanilla or Caramel Ice Cream
- Fresh Apple, Cinnamon, Nutmeg, & Allspice
Combine ingredients in a high-power blender. Blend until thick and rich. Garnish with whipped cream and an apple slice.
5. Spice Rum Grilled Pineapple
A culinary-inspired serve that treats the pineapple as the star. Caramelized with brown sugar and Spice Rum, this is an exotic delight favored since the 17th Century.
Ingredients & Method
- 4 oz Kōloa Kaua’i Spice Rum
- Whole Pineapple & 2 tbsp Brown Sugar
- Vanilla or Caramel Ice Cream
Brush pineapple rounds with Rum and sugar marinade. Grill until caramelized. Serve warm with ice cream and extra Rum drizzle.
6. Blue Hawaiian (Natural)
First created in 1957 in Waikiki. Our version uses Blue Spirulina for a natural, vibrant hue that honors the Hilton Hawaiian Village legacy.
Ingredients & Method
- 2 oz Kōloa Kaua’i Coconut Rum
- 3 oz Pineapple Juice & .5 oz Orange Liqueur
- Pinch of Blue Spirulina (Dissolved)
Shake all ingredients with ice. Strain into a tiki glass and garnish abundantly with tropical fruit and flowers.
7. Hazelnut Cream Affogato
Tracing its roots back to the 17th Century, the Affogato is a sophisticated blend of coffee and cream. This serve highlights the rich notes of our Coffee Rum.
Ingredients & Method
- 1 oz Kōloa Kauaʻi Coffee Rum
- .25 oz Hazelnut Cream Liqueur
- 1 Shot of Espresso & Vanilla Ice Cream
Scoop ice cream into a chilled glass. Combine Rum, Espresso, and Liqueur, then pour over the ice cream.
